Easy Summer Burrata

Ingredients:

  • 1 to 2 4-ounce balls burrata cheese

  • Summer fruit: heirloom tomatoes, ripe peaches, watermelon, cantaloupe or honeydew, berries, etc

  • 1 handful fresh basil leaves and thyme sprigs

  • Extra virgin olive oil

  • Chunky sea salt

Watermelon + Blackberry Sangria

  • 1 bottle (750 ml) rose wine, chilled

  • 1/4 cup watermelon schnapps liqueur

  • 1-1/2 cups cubed seedless watermelon

  • 1 medium lime, thinly sliced

  • 1/2 to 1 cup fresh blackberries, halved

  • 1 can (12 ounces) lemon-lime soda, chilled

  • Ice cubes

  • Fresh basil or mint leaves

Grilled Peaches

  • 4 ripe peaches, halved and pitted

  • Extra-virgin olive oil, for brushing

  • ½ cup walnuts, toasted and crushed

  • ½ teaspoon cinnamon

  • ¼ teaspoon sea salt

  • Vanilla ice cream

Summer Pasta Salad

  • 1 pound dry pasta

  • 1 small yellow bell pepper, diced

  • 1 small red bell pepper, diced

  • 1 small orange bell pepper, diced

  • 1 large seedless cucumber, chopped

  • 12 oz jar artichoke hearts in water, drained and chopped

  • 1 pint grape tomatoes, halved

  • 1 cup balsamic vinaigrette

  • 1 cup crumbled feta cheese

  • 1/3 cup finely chopped basil

  • Salt and black pepper, to taste

Bing Cherry-Amaretti Fool

  • 1 envelope unflavored gelatin

  • 1/3 cup cold water

  • 1 cup sour cream

  • 1/2 cup sugar

  • 1 tablespoon lemon juice

  • 2 cups coarsely chopped fresh Bing or other dark sweet cherries, divided

  • 1 cup heavy whipping cream

  • 1 cup coarsely crushed amaretti cookies (about 16 cookies)

  • 1/2 teaspoon almond extract

  • 1/2 teaspoon vanilla extract
